Does a Mobile Kitchen Trailer Include a Dishwasher? Why a Separate Dishwashing Trailer Keeps Service Moving

If you are planning a temporary kitchen — a school cafeteria renovation, a hospital kitchen remodel, a festival, or a disaster-relief feeding operation — one question comes up early: where do the dishes go?

Here is the short answer: California Mobile Kitchens (CMK) kitchen trailers do not include a dishwasher. Dishwashing gets its own dedicated unit: a 24-foot dishwashing trailer. That separation is deliberate, and it is one of the reasons a temporary kitchen can keep serving hundreds of meals without falling behind.

Why dishwashing gets its own trailer

In a working commercial kitchen, cooking and dishwashing compete for the same three things: space, water, and staff attention. Put them in one trailer and every dirty pan slows down the next meal. Give dishwashing its own trailer and the two workflows run side by side instead of in each other's way.

A dedicated dishwashing trailer also keeps clean and dirty work apart. Dirty plates, pots, and utensils go one way; clean, sanitized items come back another. That separation makes it easier to keep a temporary setup orderly and to meet the health department requirements your local inspector will check. CMK units are built to meet or exceed state and county health department requirements, and customers obtain their local health permits with documentation supplied by CMK.

The practical benefit is simple: your kitchen never has to stop cooking to catch up on dishes.

The 24-foot dishwashing trailer

CMK's dishwashing trailer measures 9 feet by 29 feet on the exterior, with 192 square feet of interior space. It is delivered and set up at your site, and it carries an HCD insignia with NSF-approved appliances. The unit has stainless steel exhaust hoods with a fire suppression system and fire extinguishers, all currently inspected and tagged.

Inside, the trailer is set up for volume:

  • Commercial-grade dishwashers, plus deep sinks and pre-rinse stations, so your crew can scrape, rinse, wash, and sanitize in a steady flow.
  • Drying and storage space, with racks and shelving for organized storage of clean dishes, utensils, and cookware.
  • A temperature-controlled interior, for a comfortable and hygienic working environment for staff and equipment.

CAD drawings of the trailer are available, so your team can plan the layout before delivery day.

What utilities does a dishwashing trailer need?

The dishwashing trailer uses the same utility profile as CMK's kitchen trailers, which makes site prep straightforward when you rent both together:

  • Power: 50 amps, 208V–220V, single-phase
  • Water: 3/4-inch freshwater line
  • Waste: 1 1/2-inch waste drains exiting the trailer
  • Propane: 50 gallons of liquid propane

Tell us about your site when you request a quote and we will confirm what your setup needs. If your site has no sewer connection, ask about the 250-gallon wastewater tank option.

Who rents a dishwashing trailer?

Schools and hospitals. When a cafeteria or patient-meal kitchen closes for renovation or construction, meal service still has to run on schedule. A dishwashing trailer keeps the temporary kitchen's cleanup keeping pace with service.

Caterers and event operators. Festivals, weddings, and large gatherings generate a mountain of dishes in a short window. A dedicated wash station means rented plates and pans cycle back into service instead of piling up.

Film sets and entertainment. On-location catering runs far from a commissary. A dishwashing trailer means the crew is not hauling dirty dishes back and forth.

Emergency response and military feeding. When a field kitchen serves large numbers of meals each day, sanitation cannot be an afterthought. A dedicated dishwashing unit keeps the operation sanitary under pressure.

Pair it with the rest of your temporary kitchen

A dishwashing trailer works best alongside a kitchen trailer. Together they form a complete temporary kitchen that can cook, serve, and clean up on site.

  • 20-foot kitchen trailer — $6,000 per month. A compact, fully equipped commercial kitchen that serves 1–300 meals per meal.
  • 32-foot kitchen trailer — $8,000 per month. A full-size commercial kitchen that serves up to 1,000 meals per service.
  • Prep kitchen trailers add extra prep space on larger jobs.
  • Refrigeration and freezer trailers — 12-foot and 16-foot cold storage trailers — hold ingredients, prepared food, and finished product.
  • Add-ons, priced by quote, include a generator, ADA ramps and decking, a waste holding tank, and a grease trap.

Delivery and setup are covered in the lease agreement, so the full pricing — including delivery and setup — is in the lease before you sign.

How to plan your rental

Start with three questions: how many meals per service, how long will the kitchen run, and what does your site already have for power, water, and wastewater? The answers decide whether the 20-foot or 32-foot kitchen trailer is the right fit, and whether a dishwashing trailer belongs in the package. If your menu uses real plates, pots, and utensils at any real volume, it usually does.

Your rental is confirmed once three things are in place: the lease is signed, payment is satisfied, and the certificate of insurance (COI) is received. Once confirmed, CMK schedules delivery and setup. With 24-hour customer service, CMK is ready to help you plan even the smallest details, all within your budget.
